Evans & Tate Classic Cabernet Merlot 2018
Evans & Tate Classic Cabernet Merlot 2018
Descriptions
Vintage:
2018 delivered a truly outstanding growing season for fruit throughout the Margaret River Region. Steady, moderate temperatures throughout January and February led to wines with clean, bright fruit flavours and wonderful, refreshing natural acidity.
Winemaking:
The grapes were sourced from our vineyards in northern and central Margaret River from sites ideally suited to growing these two varieties. Fermentation in static fermenters followed picking in the cool of the morning to ensure a slow, steady onset to fermentation. The Merlot portion was cold soaked for five days, which was followed by an early pressing to ensure a softly structured wine at blending. The wine matured in well seasoned old oak barriques and hogheads for seven months before bottling.
TASTING NOTES
Colour: Vibrant purple, with a brilliant red rim.
Aroma: Bold redcurrant and cranberry notes with a touch of dried herbs.
Palate: Plum, blackberry and black olive flavours drive the wine with a lovely soft and fleshy structure.
Cellaring: Drinking well now and will continue to do so for up to five years from vintage.
